These shrimp taste elegant but they only require two ingredients, shrimp and pesto!
I recommend one 8.1oz jar of pesto for every 2lb of shrimp you use.
Here's what you do:
1. After peeling the shrimp, put them in a bag with the pesto.
2. Then put them in the fridge and forget about them. You don't have to worry about these over-marinating because the pesto doesn't have anything acidic in it. Yesterday I prepped these in the morning and didn't grill them until I came home after a full day of work. They were totally perfect. How long should they marinate minimum? Probably an hour.
3. When you're ready to grill, put the shrimp on skewers.
4. Heat up the grill and get these guys going.
They cook fast! You'll want to flip them just after a couple minutes, when the pink starts to show on the sides.
Just a couple minutes on the other side, and then you're ready to eat!
