There are days when you just want to bite into a raw tuna steak. I was having a diner party and I wanted to make tartare with ginger, avocado and something faintly sweet to it, like honey. I scourged the internet, but found no recipe that fit all my wants. Instead I had my own test kitchen, and I must say the tartare was everything I hoped for (I always get what I want).
